Okay, you know you have to keep your Hair Raiser beans safe from moisture and staling. Since the bean itself is the best packaging, it's best by far if you buy them whole and grind them just before brewing. As soon as you crush those little packages, oxygen gets inside and they begin to stale within minutes. (We do sell ground coffee in gas-flushed valve bags for those times when you just can't grind it yourself; say, when you're backpacking to Machu Picchu.)

There are three basic types of home coffee grinders: blade grinders, burr grinders and espresso grinders. A blade grinder is basically the same as a blender. Steel blades, powered by an electric motor, bash the beans around and break them up. We're not fond of this type, since it's almost impossible to control the grind. You can beat the beans longer to break them up finer, but you're still going to get chunks and dust.

Burr grinders, whether powered by a motor or hand-cranked, are a far better option. The beans are ground between two corrugated metal disks or cones--one is stationary while the other moves. The distance between the grinding elements determines the fineness of the grind, with great accuracy. The only drawback is that you can't grind flavored coffees in these, but we don't sell that stuff anyway.

If you're using a real pump or piston espresso machine, you'll need a grinder that can calibrate the fineness of the grind to the water pressure. Whatever type of grinder you use, you should grind your beans as finely as possible without clogging your brewer. The finer the grind, the more of the bean is exposed to the extracting water.
