Dark Roast Espresso
The term espresso refers to several different elements. It is a particular roast of the coffee bean, darker than most, though not the darkest (except for Hair Raiser, which is indeed the darkest). It is a particular method of grinding, producing a grind that is extremely fine (without being powdered) and flaked rather than crushed or torn. It is, perhaps primarily, a method of brewing, in which hot water is forced by pressure through the tightly compacted ground beans. Espresso is also a cultural icon. Traditional Italian espresso is served in tiny cups called demitasse, holding only about an ounce and a half. The pressurized brewing produces a golden froth, called crema. It is often sweetened, and may be served with a lemon twist. Recently, American coffee culture has experience the rise of an entire espresso-based menu. Traditional variations on espresso added steamed milk and froth. That has been expanded into a rather bewildering array of flavorings and concoctions that are called espresso drinks, but bear the same relation to true espresso as those candy-flavored confections served in a martini glass bear to a real martini. One great new advance, however, is the recently developed home espresso machine. These can produce a very good pull with the appropriate crema.
