Dark Roast Arabica
Coffee grown and sold commercially is always one of two types, Arabica or Robusta. Arabica is the oldest species to be cultivated, and still the one most widely used; about 70 percent of all coffees are Arabica. One hundred percent of all fine or specialty coffees, including Hair Raiser, are Arabica--Robusta is decidedly inferior and used only in cheaper, mass produced blends. An Arabica tree looks like a camellia, with broad, shiny leaves. Its small white blossoms are star-shaped, like jasmine. The scent of the Arabica blossom adds its subtle note to the overall aroma of the roasted bean. Arabica trees are self-pollinating, which keeps the varieties pure. A tree takes about three years to bear from seed, and produces from one to twelve pounds of coffee per year when mature. All you really care about is taste, though, and Arabica is by far the better of the two coffee beans available. Since no self-respecting fine coffee would use anything but Arabica, the name itself only guarantees a lowest common denominator. The species of Arabica used, the way it is grown, how it is processed, and especially the nuances of roasting are what give specialty coffees their distinctive characteristics.
