The secret to Hair Raiser coffee is in the roasting. We've found a way to roast it deeper and darker than anyone else, without getting that burned, bitter taste. We call our technique "power roasting." We blend three beans in our standard Hair Raiser. Two are French roasted, which is usually considered the darkest roast, and one is taken beyond French roast. What's our secret? Most coffee is roasted slowly, but our founder, John Goerke, searched for a roaster that could do it fast and hot. He found what he was looking for in Spain. It's a tricky process: A second or two can make the difference between Hair Raiser and burnt beans, but nothing truly excellent comes easily. Others have tried to roast extra dark, but without success. When they turn up the heat, the burning chaff from the beans infuses the coffee with that nasty, ashy taste. Our roasters are designed with a high-tech diagonal air flow that expels the chaff. That's why we can roast so dark without burning.
